😋Here’s a fast & easy one-pot entrée that tastes even better the next day. Serve it with a salad or sprouted grain bread (or both). Yum! The nutritional yeast (you can find it at most grocery stores) helps give a “cheesy” flavor to this Italian-inspired bean dish.
(Makes 4 servings)
● 1 Tbsp olive oil
● 4 cloves of garlic, minced
● 1 tsp red pepper flakes
● Sea salt
● 1 15 oz (425 g) can tomato sauce
● 2 15 oz (425 g) cans cannellini beans
● ½ cup fresh parsley
● 2 Tbsp (or more) nutritional yeast
In a medium pot over medium heat, heat the oil. Add the garlic, red pepper flakes, and a pinch of salt and saute for about 1 minute, until the garlic starts to soften but not burn. Pour in the tomato sauce and ½ cup (120 ml) of water Stir and reduce the heat to low, allowing the sauce to simmer for 10-15 minutes. Rinse and drain the beans and stir into the sauce, and allow to warm for 5-10 minutes. Stir in the parsley and nutritional yeast and continue to cook for another 5-7 minutes. Serve and enjoy!
